Blueberry Muffins

Quantity: 12 muffins

  • 170 grams of pineapple juice
  • ¼ cup oil
  • 1 egg
  • 1 ½ tbsp freevia
  • 1 teaspoon vanilla extract
  • ½ cup plain yogurt
  • 60 grams of milk
  • 1 cup blueberries ( fresh or frozen )
  • ½ cup rolled oats
  • 1 ¾ cup pastry flour than whole wheat
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

Preheat oven to 190 oC. Grease the pan of muffins . In a small bowl , soak the oats in pineapple juice for about 10-15 minutes. Beat the oil together with the egg and vanilla extract in a separate bowl . Dilute yogurt with milk and add to the bowl with the liquid ingredients and beat again all together. Mix and soaked in pineapple juice oats. Sift together the flour, the baking soda and salt. Pour the dry ingredients into the liquid mixture , stirring as little as possible . Pour the blueberries just before thoroughly mixed the flour. Fill with a spoon the muffin pan and bake for about 25-30 minutes .
