How to make a tasty cake without sugar, but with stevia
Stevia now is one of the most important ingredients in many bakery products.
he sweet taste is just one of the pros. Professional bakers support that stevia contributes to the overall crispiness and browning of the baking goods.
But how can stevia remain always so sweet? Stevia is heat stable, that means its sweetening power is not lost in the high temperatures required for baking. Additionally though, stevia works not only as a sole sweetener, but it also natural enhances certain flavors such as salt and spices.
The most difficult part in replacing sugar is the role it plays to their physical structure. Sugar naturally creates a bulk, so when using a sugar substitute such as stevia this bulk must be substituted as well. In order to create this necessary bulk in your baking, you can freely use egg whites, fruit puree or yogurt.
The Basic Substitution for baking works like this:
1 cup of sugar is equal to 18 to 24 stevia sweetener packets.
Carrot Cake Recipe
This time we have the very favorite carrot cake recipe but healthier, just for you, our Freevia guys!
It’s simple, it’s delicious and it is 100% sugar free.
If you are one of those guys who want to cut of sugar for the week or more, but have a sweet tooth, Freevia Stevia is a product just for you and your baking.
You’ ll need:
For the dough
- 4 eggs
- 300gr of Olive Oil
- 150gr powder Stevia
- 500gr grated carrots
- 100gr whole wheat flour
- 150gr all-purpose flour
- 150gr walnuts (crashed)
- Baking Powder
For the Frosting
- 400 light cream cheese
- 1 cup of milk
- 3 tbs of Freevia Stevia
Step by Step
- 1. Beat the eggs
- 2. Add the Olive Oil and mix again
- 3. Add Freevia Stevia sweetener and mix some more
- 4. Add the grated carrots
- 5. Add both flours
- 6. 6.Add the crashed walnuts
- 7. 7.Add just 1 tsp of Baking Powder
- 8. Mix everything with a wooden spoon or a hand mixer
- 9. Spread the dough and bake it in 180 degrees for 45 minutes
*For the frosting mix all the ingredients together and just poor it over your cake. For even better aesthetic results, you can slice your cake in 2 or3 pieces and add some frosting in between like we did!
