In 1978, a model dairy processing unit was established in the mountainous village of Karines, one of the most important livestock farming regions of Crete, dedicated to transforming local Rethymnian milk into genuine, pure dairy products. Pantelis Tzourbakis, alongside his son Giannis Tzourbakis — a cheesemaker and graduate of the Dairy School of Ioannina — and the entire family, has continued since 1978 a long-standing tradition and commitment to cheesemaking. Using local milk from Karines and the wider Rethymno area, they produce authentic traditional dairy products of exceptional quality. The quality and identity of our production are based on:
  • the high quality of the milk produced in the mountainous village of Karines, at an altitude of 560m,
  • the fact that the dairy facility is located within the milk production area itself,
  • modern equipment that ensures compliance with all hygiene regulations (HACCP), combined with the meticulous application of traditional Cretan cheesemaking techniques.

Our Commitment to Quality

At Tyrokomio, all necessary resources and modern infrastructure are provided to ensure the quality and identity of our products. Combined with premium raw materials and the careful application of traditional methods, these elements guarantee excellence in every product we create. During production, a Food Safety Management System (HACCP) is implemented in accordance with the ISO 22000:2018 standard and is fully certified.

Milk Processing Procedure

Most of the milk is delivered directly to the dairy by collaborating local producers every morning and evening and is stored in the facility’s cooling tanks. A portion of the milk is collected daily from producers equipped with cooling tanks using a modern insulated tanker truck. The dairy cooperates with an accredited laboratory that monitors the quality of both the milk and the final products, while also supervising the effective implementation of the HACCP Food Safety Management System according to the ISO 22000:2018 standard. After thorough inspection for antibiotics, temperature, and pH levels, the milk is filtered, purified, pasteurized, and, when required, partially skimmed. The process is then followed by milk coagulation, maturation, production, and finally the packaging of our products.
